1. PRU, the island's only MICHELIN-starred dinner
PRU at Trisara is the special-occasion table on Phuket: the island's only restaurant holding a MICHELIN star in the MICHELIN Guide Thailand 2026, which also awards it a Green Star for sustainability, on a private bay just north of Bang Tao. The PRU Experience tasting menu is 7,500 THB++ per person from 1 October 2026.
Read that date carefully, because it is the thing to know this month: PRU is closed for its annual break until 1 October 2026. When PRU reopens, dinner runs Tuesday to Saturday with fixed seatings at 6:00, 6:30 and 7:00 PM, in a small solar-panelled room by the sea where outdoor tables catch the sunset. Everything on the plate is sourced in Thailand, much of it from the restaurant's own farm, PRU Jampa, and Trisara describes the evening as a candid exchange between chefs and guests: "our kitchen is your dining table."
PRU books out most nights in high season, so reserve thirty to sixty days ahead and ask for an outdoor table on the sea side. 2. Saffron, a table over the lagoons
Saffron is the quietest resort dinner in Laguna: Banyan Tree's signature Thai restaurant, seating just 92, with tables looking over the resort's saltwater lagoons. The set menus run about 2,300 THB net per person, with à la carte mains roughly 550 to 1,070 THB net; the seasonal Table of Legends guest-chef dinners are ticketed separately at 4,900 THB net.
Saffron's dining room was redesigned in March 2026, and Banyan Tree was careful to keep what made it work, the serene lagoon views, while adding two private dining rooms for celebrations. This is the original Saffron, the restaurant that grew from a curry house into the flagship Thai dining room of the whole Banyan Tree group, so the cooking is traditional recipes given contemporary plating rather than an experiment.
Saffron serves dinner only, daily 6:30 PM to 10:30 PM, smart casual. 3. Bisou, candlelight and a bar until 1 AM
Bisou is the candlelit dinner in Cherngtalay: a modern French restaurant and cocktail bar at No.4 Bandon-Cherngtalay Road, plated to share, a few minutes from Laguna, Boat Avenue and Bang Tao Beach. Signature dishes run 1,290 to 2,990 THB and mains 490 to 990 THB, and the bar stays open until 1 AM.
Bisou was built for two: a wall of kisses, a spiral staircase, low light, and a menu written for two pairs of hands. Share the truffle French toast (390 THB) to start, then the beef Wellington (2,990 THB) carved at the table or the whole seabass in salt crust (1,290 THB), flambéed in front of you. Chef Antoine Darquin and sommelier Théo Lavergne founded Bisou in 2025, head chef Manon Bares runs the kitchen and Louis Chartier the room.
Two things make Bisou work for a couple staying nearby. The kitchen takes its last food order around 11 PM but the bar carries on to 1 AM, so dinner does not have to end when the plates go, which is rare here and the subject of its own guide to eating late in Bang Tao. Suay Cherngtalay sets twenty-six tables in a tropical garden inside Baan Wana Park, with the lights coming on one by one at dusk, and is listed in the MICHELIN Guide Thailand 2026 as Suay (Choeng Thale). Sharing set menus for two start at 2,199 THB, so about 1,100 THB a head.
Chef Tammasak "Noi" Chootong cooks Thai contemporary at Suay, Thai ingredients through European technique, and the set menus are built exactly for two people who want to try everything: six dishes, with signatures like miang foie gras and sous vide beef short rib. Because Suay sits in a garden compound off Si Sunthon Road rather than on a roadside strip, the noise is cicadas rather than scooters.

Carpe Diem sits at the waterline on the quieter southern end of Bang Tao Beach, under tall coconut palms, and its fire show on the sand runs at 7 PM at the end of the Sunday La Dolce Vita day. Mediterranean cooking, à la carte, with a wood-fired oven and seafood built for two.

Moonshine is the after-dark room: a candlelit Prohibition-style lounge on Lagoon Road at Boat Avenue, with dark walls, crimson velvet, leather banquettes and live music six nights a week from 8:00 to 11:30 PM. Dinner at Moonshine runs about 1,000 to 2,000 THB per person.
Phuket 101 calls Moonshine the island's only true speakeasy-style bar and gastropub, and the kitchen backs the setting up with house-made pasta, steaks and seafood: share the lobster linguine at 690 THB++ with something off the Prohibition-inspired cocktail list. The jazz and swing nights are Friday, with Frankie Hong's Trio, and Saturday, with the Chill Out Jazz Band.

8. Ma Doo Bua, a table over a lotus pond
Ma Doo Bua sets Thai pavilions and terraces directly over a pond of giant Victoria amazonica water lilies, whose floating pads reach up to three metres wide. Expect 400 to 800 THB per person, and come in daylight.
The Ma Doo Bua ritual is the reason to go: for 350 THB a staff member helps you stand on a lily pad for a photograph, on pads the venue says hold up to about 50 kilos, with drone packages of the two of you over the pond from 500 THB. Then you eat what the pond grows, deep-fried lotus-stem fries and stir-fried lotus stems with shrimp paste, at around 250 THB a plate. The whole thing sits inside a replica traditional Thai village of teak-style villas and canals.
Plan Ma Doo Bua as a late-afternoon date rather than a night out: the café serves 9 AM to 9 PM, but the lily-pad photograph and the drone package need daylight, so arrive around 4:30 to 5:30 PM and ask for a pavilion out over the pond. 9. 360° Bar, sunset from the hill above Layan
The 360° Bar at The Pavilions Phuket sits at the highest point of the resort on the hill above Layan, with an open deck over the Andaman and Bang Tao bay, and it does not admit children under 16. Small plates run from about 110 to 250 THB, with cocktails around 350 THB.
Getting up to the 360° Bar is part of it: a resort buggy takes you from reception up the bamboo-lined hillside road to the deck. Happy hour runs 7:30 to 8:30 PM with half price on selected drinks, which lands exactly after the sun has gone, and the adults-only rule keeps the deck quiet.
Be clear on the format: the 360° Bar is a tapas and cocktail rooftop, not a long à la carte dinner room. Leilani is a candlelit vintage gallery in Manik, inland from Cherngtalay, where a soprano sings live opera between courses at the Saturday Dinner Party. The five-course set menu is 2,500 THB plus 10 percent per person, by reservation only, and includes a welcome drink.
The Leilani room is design, art and dining in one, and the Saturday evening is deliberately kept small, so it plays like a private dinner party rather than a performance with a meal attached.
